German Sweet Potato Salad

German “Potato” Salad


  • 2 Sweet Potatoes (diced)
  • 4 Slices of Turkey Bacon
  • 1 tablespoon Butter
  • 1 tablespoon Gluten Free Flour
  • 2 tablespoons Turbinado Sugar
  • 1/3 cup Water
  • 1/4 cup Apple Cider Vinegar
  • 1/2 cup Green Onions (chopped)
  • Sea Salt & Pepper (to taste)


Step 1
Bring a large pot of water to boil. Add potatoes. Cook until tender but still firm. Drain and set aside
Step 2
In a deep skillet, on medium, melt butter then add bacon. Cook until evenly browned and crisped. Set aside turkey bacon and chop. Do not drain pan.
Step 3
Add flour to butter and mix until flour is completely saturated. Mix in sugar, water, and vinegar and cook over medium heat until thickened.
Step 4
Add potatoes, bacon, and green onions to skillet and stir until coated. Season with salt and pepper and serve warm.
