This is another sweet grapefruit recipe and while this one isn’t mellowed by broiling, the honey and mint are great compliments to the tartness of the grapefruit. This recipe is great on a hot, summer afternoon and can be served at room temperature or cold.
Grapefruit Salad with Mint
- 2 Grapefruit (trimmed and sectioned)
- 2 tablespoons Honey
- 2 heaped tablespoons Mint (finely chopped)
|Whisk together honey, mint, and the juice from a grapefruit section to make dressing. Set aside.|
|Arrange grapefruit slices in a bowl or on a plate and drizzle dressing over the top. Serve|
